About our Benefits & Compensation Service Charge
To help create a more equitable compensation system, we use a "Benefits & Compensation Service Charge" of 18% applied to each guest check. This charge is applied entirely to employee compensation. It allows for a sustainable business model while also providing above-standard compensation. It is particularly helpful in creating a better wage balance between our customer-facing team members and those who work in the kitchen..
We call this charge “Benefits and Equity” because that is what it supports. The B&E Charge directly contributes to:
>> A base hourly wage that exceeds minimum wage.
>> A five-percent daily revenue share distributed to all hourly team members based on hours worked, excluding salaried management.
>> Providing paid time off for personal, health and vacation absences.
>> Providing employees working more than 30 hours a week access to medical benefits.
>> Providing all employees a 3% match towards a retirement fund.
>> Access to a bilingual 24-hr employee assistance program, which provides mental health, crisis and wellness support for those in our industry. Additionally, 1% of the of the charge will fund an "Employee Assistance Fund", to assist employees facing unexpected financial emergencies such as housing insecurity, adverse health events, emergency transportation needs, etc.
Historically, restaurants in the United States have relied on customer tipping to supplement the wages of its customer-facing service staff. Tipping is such an accepted part of the U.S. restaurant economic model that many states (including Connecticut) have laws that allow restaurants to pay reduced minimum wages to service staff in anticipation of tip income.
The revenue from the "B&E" charge allows us to maintain a market-priced menu and to achieve our goal in creating a compensation model that provides greater equity. We also believe the charge helps eliminate the effect of unconscious bias in our compensation model. Industry studies have found gender bias in tipping and that Black or Brown servers receive less tip income than their White counterparts.
>> Will guests still be allowed to tip?
As noted above, our industry was built on a tipping model. Most Americans consider a 15-18 percent tip a normal part of dining out, a gratuity that occasionally increases to 20 or even 25 percent for exceptional service. For the reasons we’ve mention, we don’t think tipping is the best model out there for our business, but we also recognize that many in the restaurant industry consider it an important element of their employment and their compensation. By retaining the tip line, we have left our customers a voluntary option – offered without expectation – to add a gratuity to recognize exceptional service from the individuals serving your table or from the team fulfilling your take-out or digital order. Those tips are shared in the traditional manner, with just those a customer directly interacts with. As we like to say, "additional tipping is never expected, always appreciated."
>> What if I am unhappy with my dining experience and do not want to pay the service charge?
If you are ever less than satisfied with the quality of your experience, please ask to speak to a manager on duty. As a "training restaurant", your feedback gives us an important opportunity to teach and train our staff. We also always want to make your experience right.
